Protein Coconut Truffles

Looking for an easy meal/snack and want to try making your own "protein bar"? How about protein balls? These little beauties are soo yummy and only require 4 ingredients!

The best thing about making your own protein balls is the fact that you know exactly what's in them, as opposed to buying a protein bar with ingredients you can't even pronounce. You can also customize these in so many different ways.

Ready to give them a try?


1 scoop protein powder (I used Quest Peanut Butter flavor)

1 Tbsp coconut flour

1 Tbsp unsweetened apple sauce

1/2 Tbsp unsweetened shredded coconut

That's it! Simple enough right?

Well there is one thing... how is your patience? These babies require some serious kneading and mashing before they get solid enough to be formed into balls.

Mix together protein and coconut flour. Then add the apple sauce. Mix, knead, smash. At first you may even laugh thinking there is no way 1 tbsp of apple sauce is enough moisture... and depending on the protein powder you used, you may have to add an extra 1/2 tbsp but no more than that.

Knead and roll into balls.

Pour shredded coconut into a small bowl and roll protein balls in coconut until it gets a nice coating.

Store in fridge for at least an hour for best texture, but you can aways eat them immediately, which I often do cause they are just too cute to wait any longer, and I don't like to wait :) But I do make a few batches at a time and they store well for a couple days in the fridge (meal prep :))

You can play with the recipe and get creative, you can sub the apple sauce for pumpkin purée or mashed banana. You can add powdered peanut butter or cocoa powder. I would love to see what you can create :)
